Sheila’s Pick: LUSTAU N/V Pedro Ximénez (PX) - Jerez, Spain
I will know I have found my husband when I awake to waffles drizzled with PX. This stuff is how they do breaky in heaven. It is dark mahogany in colour, lusciously sweet, smooth and full-bodied with incredibly complex flavours, including dried figs, dates, raisins, coffee, dark chocolate, nuts and toffee.
If waffles (or morning drinking) aren’t your thing, it’s also great served over ice cream or as an accompaniment to dark chocolate or blue cheese.
Serve slightly chilled.
